Howdy folks, wondering what type of steaks are best for pan-frying, or if it matters. Just got a rather large electric skillet.

that thing will cook them well done. You don't want to hear mooing in the pan.

Hmmm. I imagine you could do any steaks that way. Just keep in mind that the thinner the cut of meat, the less time is needed to cook it. So those really thin cheapy steaks wouldn't take much time at all. The really thick, more expensive ones will take longer...but they taste way better, when you can afford them.

If you're going to be pan cfrying, you don't want to use a steak at all. Steak is
a big, juicy, expensive cut of meat. It should stand on its own. If you want to
pan fry something, you want to mix flavors with it, and let them stand out. So,
use a swiss steak. Its a lot more fatty, but if you use what's called a needler,
you can turn that to your advantage. Ask your butcher for something they'd use
for pan frying, they'll lead you in the right direction.

If you're gunna pan-fry a steak, you probably want to do a rib-eye. It's a little expensive just for doing that and I frankly prefer broiling those, but if you pan-fry it with a little butter on both sides for about five minutes a side, it comes out generally good. If you can carmelize some onions and do some mushrooms and maybe put some garlic in the butter, it comes out tolerably well. I like to make sandwiches that way, but that's about the only way I like pan-fried steaks.
